Job Description
Responsible for professional, effective and efficient handling of all Food and Beverage needs in the community.
The Sous Chef/Chef also provides exemplary service in a manner consistent with the values and mission of the Castle Group. He or she performs all responsibilities while demonstrating outstanding customer service skills representative of Castle Royal Service as it relates to this function. This includes working interdepartmentally as well as with our external customers.

Essential Duties & Responsibilities
Includes the following. Other duties may be assigned.
Working with the F&B Manager, to create, cost, teach and prepare seasonal menus.
Working with theF&B Manager, to teach and coach new and existing team members on current and future menu processes and cleaning procedures.
Consistent maintenance of/and refinement of Steps of Royal Service standards.
Working with the F&B Manager, to place and/or review weekly orders for products necessary to be successful.
Assist in maintaining food, beverage and labor cost consistant with budget and sales expectations.
Lead and oversee EOM inventories and reconciliation.
Assures outlet pars of all china, glass, and silver are at identified levels daily.
Assure staff have the tools and supplies to do their job.
Participates in planning, organizing, and controlling cost for events on property.
Interview, Hire, Train, Coach, and hold associates accountable to job performance.
Assures Cleanliness of all F&B areas. (restaurant as well as banquet facilities where applicable)
Resolve guest complaints, ensuring guest satisfaction.
Monitor and maintain cleanliness, sanitation, and organization of all F&B components.
Maintain complete knowledge of menu items and bar recipes, and train associates to execute.
Maintain complete knowledge of local, state, and federal food safety standards.
Ensure that assigned staff has reported to work, document any late or absent employees.
Coordinate breaks for assigned staff.
Assign work and side duties to staff in accordance with departmental procedures.
Communicate additions or changes to the assignments as they arise throughout the shift.
Conduct pre-shift meeting with staff and review all information pertinent to the day's business. Inspect grooming and attire of staff; rectify any deficiencies.
Education/Training/Certifications/Licenses:
High school diploma or equivalency required. College level courses in business or hospitality preferred. SafeServ® certified manager.
Experience/Knowledge/Skills:
- One (1) to two (2) years of business experience preferred. Outstanding customer service, communication and interpersonal skills required. Effective written and verbal skills. Additionally, the following are highly desirable:
- Experience in the management of a bar or beverage service operation.
- Complete working knowledge of alcoholic and non-alcoholic beverages.
- Knowledge of business management principles and practices.
- Knowledge of basic accounting procedures.
- Knowledge of cost control procedures.
- Knowledge of human resource management practices.
- Knowledge of administrative procedures.
- Judgment and decision-making ability.
- Problem-solving ability.
- Organizing, planning delegation skills.
- Resource allocation and management experience.
- High Attention to detail.
- Coaching and Mentoring skills.
- High level of stress tolerance.
- Team member attitude.
Computer literacy:
Intermediate command of computer hardware/software is required.
Language requirements:
Multiple language fluency may be required or preferred, depending on community.
Travel and availability requirements:
May be required to travel for training sessions off-site on an ad-hoc basis.
Ability to work extended hours and weekends if needed.
Physical Requirements:
Ability to lift up to 40 lbs. work in an upright standing or sitting position for long periods of time, will fluctuate day by day; must be able to stand up regularly or remain standing for long periods. Handle, grasp and lift objects and packages. Reach with hands and arms, communicate, receive and exchange ideas and information by means of the spoken and written word.
Ability to quickly and easily navigate the property/building as required to meet the job functions and complete all required forms.

Working Conditions:
The majority of work will be completed indoors in a temperature-controlled environment with little to moderate noise levels. May require outdoor site visits on an occasional basis.
