SOUS CHEF – The Club at Seven Canyons (Sedona, AZ)

The Club at Seven Canyons, a private golf club and luxury residential community located within the striking red rock landscape of Sedona, Arizona is seeking an amazing, motivated full-time Sous Chef to join our incredible team.

The ideal candidate is a natural leader with previous supervisory experience as well as experience with high-volume private club, cooking. You will be assisting the Executive Chef in maintaining the operation of the kitchen, from running service, food prep, and quality control for inventory and physical maintenance.

This position is responsible for supervising and assisting in the preparation of all food items based on standardized recipes to produce exceptional food that exceeds the highest-quality standards, creating memorable dining experiences. He/she is also responsible for ensuring the cleanliness, sanitation and safety in the kitchen, work and storage areas while minimizing waste and maximizing cost/production ratio.

Qualifications:

  • 3 Years of elevated cuisine experience.
  • Supervisory experience required.
  • Ability to work a flexible schedule.
  • Must be able to convey information and ideas clearly.
  • Must be able to evaluate and select among alternative courses of action quickly and accurately.
  • Must work well in stressful high-pressure situations.
  • Must be effective in handling problems in the workplace including anticipating, preventing, identifying, and solving problems as necessary.
  • Must be effective at listening to, understanding and clarifying the issues raised by co-workers and guests.
  • Must be able to work with and understand financial information and data and basic mathematical functions.
  • Must maintain composure and objectivity while under pressure.

Job Duties:

  • Ensure that all kitchen personnel fulfill their job functions appropriately.
  • Create menus and food presentation.
  • Address and resolve all customer problems in an efficient and effective manner.
  • Preform spot checks for menu accuracy and taste.
  • Minimize spoilage waste and over production.
  • Regularly review house counts, forecasts, and VIP lists.
  • Monitor all Banquet and Catering activity.
  • Assist Chef in maintaining all kitchen inventories.
  • Assist in the achievement of departmental objectives and goals.
  • Expedite peak meal periods by maintaining a 'hands on' approach.
  • Works within monthly set food cost budget, adjusting food requisitions as needed and control waste.
  • Monitors food outlets for creativity, quality, cleanliness, and food safety.
  • Assures timely set up, schedules, and that all line cooks in all areas in proper uniform.

Supervision Exercised:

Supervises line cooks, prep cooks, dishwashers and all other staff as directed by the Chef & Director of F&B.

Supervision Received:

Chef & Director of F&B / Event Sales Manager

Minimum Requirements:

  • High School or GED, at least five years’ experience in the food and beverage industry.
  • Must have the ability to read and interpret documents such as safety rules, operating and maintenance instructions and procedure manuals.
  • Must have the ability to write routine reports, correspondence and be able to speak effectively before groups of customers or employees.
  • Ability to apply common sense understanding to carry out instructions furnished in written, oral or diagram form.
  • Ability to deal with problems involving several concrete variables in standardized situations.
  • First Aid/CPR/AED certifications preferred. ServeSafe Manager’s Certification (can obtain after hire within 90 days). Ability to work extended hours at times, including weekends.

  • 15% Sitting
  • 85% Walking, standing, and bending
  • Lifting/Carrying up to 50 lbs.
  • Hearing and Manual dexterity
  • Distance vision 1-3 feet
  • Ability to drive golf cart on occasion as necessary
