Job Description
The Kitchen Manager is a key leader in our residential restaurant community, responsible for ensuring smooth kitchen operations and maintaining the highest standards of service. This role requires a hands-on, energetic leader with strong organizational skills, a focus on guest satisfaction, and a solid understanding of food and beverage financials.
The Kitchen Manager provides exemplary service in a manner consistent with the values and mission of the Castle Group. He or she performs all responsibilities while demonstrating outstanding customer service skills representative of Castle Royal Service.
Essential Duties and Responsibilities

- Team Leadership and Staffing
- Actively contribute as a working member of the Food & Beverage team, assisting in kitchen tasks as needed during peak times.
- Recruit, interview, hire, train, and retain qualified Kitchen staff and other BOH personnel.
- Supervise and coordinate kitchen staff, including all kitchen personnel
- Guide, mentor, and support team members in their roles, stepping in to help where needed based on business volume.
- Hold team members accountable to performance standards and ensure adherence to the Royal Steps of Service.
- Write employee schedules based on current business trends and financial budgets to ensure adequate staffing levels.
- Conduct pre-shift meetings to review daily business information, ensure staff readiness, and inspect grooming and attire standards.
Inventory and Supply Chain Management
- Oversee inventory levels for all kitchen products
- Track stock, place orders, and manage deliveries to maintain optimal stock levels at all times.
- Perform regular inventory audits and reconciliation to minimize waste, optimize stock levels, and prevent shortages.
- Participate in the planning, organizing and controlling weekly inventory orders for products necessary to be successful.
Kitchen Equipment Maintenance
- Ensure that all kitchen equipment (e.g., coolers, dishwasher, ice machines, etc.) is properly maintained and fully operational.
- Coordinate repairs and maintenance of kitchen equipment, ensuring compliance with health and safety standards.
Health & Safety Compliance
- Ensure compliance with local, state, and federal health standards, including food safety regulations and alcohol handling.
- Adhere to OSHA, ADA, FDA, and other safety standards, maintaining a safe and clean work environment.
- Ensure bar areas and front-of-house operations meet health and safety regulations, including sanitation practices.
Cleanliness and Organization
- Maintain cleanliness and organization in all front-of-house areas, including storage, refrigeration, and prep zones.
- Ensure all items are stored properly and according to regulatory standards, maintaining strict cleanliness and organizational protocols.
Customer Service and Conflict Resolution
- Address and resolve customer complaints or issues in a professional and timely manner.
- Handle difficult situations effectively, ensuring a positive guest experience at all times.
Cost Control and Waste Reduction
- Monitor and control costs related to bar supplies and inventory, ensuring efficient use and waste reduction.
- Help implement best practices to manage bar expenses and improve profitability without compromising service quality.
Event Planning and Beverage Menus
- Assist in the creation and planning of quarterly beverage menus and event-driven drink specials.
- Participate in planning and executing catered events and special events for clubs or groups.
Administrative Duties
- Complete all required paperwork and closing duties in accordance with departmental standards.
- Participate in end-of-month inventories and reconciliation, ensuring accurate records of stock levels.
- Attend daily and weekly food and beverage meetings, contributing to planning and communication.
Miscellaneous Responsibilities
- Participate in board and committee meetings as required, providing input on operational matters.
- Stay current on trends and changes in the food and beverage industry, incorporating relevant practices into operations.
- Team Leadership and Staffing
Supervisory Responsibilities
- Directly manage the kitchen staff
- Carry out supervisory responsibilities in accordance with Castle’s policies and applicable laws.
- Responsibilities include interviewing, hiring, and training, developing and mentoring employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

Education and Experience
- High School Diploma or equivalent combination of education and experience preferred
- Have some experience managing a kitchen in a restaurant including but not limited to 1-year of experience.
- Basic understanding of cost of goods sold, menu pricing, and financial schedule extension.
- Experience placing food and beverage orders both in person and online, through major vendors.
- Portioning, Prep Sheets and other cost and quality controls.
- Continuing education will be offered and administered as needed.
Skills and Abilities
- Proficient in the English language
- Strong communication skills, including the ability to communicate, receive, and exchange ideas and information by means of spoken and written language.
- Capable of training and developing staff to meet high service and operational standards.
- Strong focus on delivering an excellent dining experience for guests.
- Understanding of food preparation, presentation, and beverage pairings.
- Knowledge of menu development, including seasonal and event-driven offerings.
- Experienced in conflict resolution for both guests and team members.
- Ability to lead and manage a team.
- Intermediate command of computer hardware/software, specifically Microsoft Office Suite (Word, Excel, Outlook).
